Ok, So I know I am a lot closer to the bottom of blog traffic than the top but I just found out (sad I know) :) that there is a very high traffic established blog out there called Skip to my Lou...pretty similar. So anyways, we got one from her and didn't think we could keep it because it is pretty big. But then I got the hankering for homemade waffles and having them belgian style sounded good! So, I got out my new toy and we are keeping it! I'll find room somewhere I'm sure :)<br />

Homemade Waffles<br />
<br />
1 cup all purpous flour<br />
1/3 cup cornstarch<br />
2 tsp. baking powder<br />
3/4 tsp. salt<br />
2 large eggssepeated<br />
1 tbls. suger<br />
1 cup milk<br />
1/4-1/2 tsp. vanilla<br />
1/3 cup butter, melted<br />
<br />
Whisk together four, cornstarch, baking powder and salt- set aside.<br />
<br />
Whisk together egg yolks, milk and vanilla, stir into flour mixture. Stir in melted butter<br />
<br />
Beat egg whites to soft peaks add sugar and beat until stiff peaks form.<br />
<br />
Fold in egg whites.<br />
<br />
Pour batter onto hot greased waffler. ENJOY!!!<br />

SO...I will just move on to this AMAZING recipe for fudge I found from <a href="http://recipegirl.com/">Recipe Girl.</a><br />

I tend to stress when I am taking something to events...I like to make something that people will like, but have it be that something new and just AMAZING. Also I wanted to stick with the holiday theme...long story short I was dying for some fudge...holiday fudge. Peppermint? No. Plain fudge...not holiday enough. But EGG NOG FUDGE?! Winner! I love love love eggnog so I was so excited, I know my husband doesn't like it but I didn't care, there was bound to be some peanut butter something for him.<br />

My only regret in making this was that I didn't do it in the morning because it smelled divine and oh so Christmasy! Here is where the funny story comes in...I was just loving it the whole time taking deep breaths over and over...MMMM...and just as I am finishing up and enjoying the first taste of my labors my husband walks in and says: (loudly and with disgust) "oh that stinks so bad!" I would have been offended but it was too funny because I had just been enjoying it so much! Also I pity him poor soul doesn't know what he is missing. But if you are like me and LOVE eggnog this is something you should try!<br />

Just make your favorite pancake recipe and add in equal parts of red and yellow food coloring to make the batter orange.<br />

Then pour out your batter into your hot greased skillet and if you didn't get a pumpkin shape by pouring just push it around a little with your spoon.<br />

Next add some delish chocolate chips. I had the large chips on hand so thats what we used! Place onto pankcake while it is cooking on the first side then when its ready flip and WHALA!<br />

You just take four pipe cleaners cut to desired length twist and glue under pom pom. Bend legs as desired and add whatever beads you want add some eyes (googley eyes would be fun too!) The kids loved doing it and loved playing with them even more! They were cute easy and so fun!<br />

I let things go. I didn't worry about my house 24/7 I always chose the kids first. And you know what it was wonderful. Now I always really choose my kids first anyone who knows me knows I don't have the imaculate house I just dream about it. But I let myself not worry about it. And to be honest my house was just as clean if not more than usual.<br />
<br />
I swear I saved energy not stressing over what I wasn't doing. Insead I made halloween costumes, and ran a booth with the beehives at our halloween carnival, went to black island farms, and shopping for family pictures (that one would have been better without my kids) but it was all wonderful! We TOTALY survived and at naptime I honestly had a little more energy to get things done and in a few short bursts I was able to get as much done as would normally take me a whole morning! So for the following week what I would challenge you to do is just LET IT GO. Don't worry, it will be fine and kids aren't kids for long. So don't stress just enjoy...baby steps, over a few naps you can get done what you need too.<br />

For Flints birthday we took him to the Zoo, it was way better than trying to fit everyone in my house. I just took some cupcakes and found this recipe in a book I have. I am assuming they are supposed to be like a cake doughnut and while they weren't as doughnuty as I would have liked...they were still a tasty cupcake. Perfectly sweet, but not overwhelming, and a little more dense than a normal cake.<br />

Doughnut Cupcake<br />

1 box yellow cake mix<br />
<br />
1 egg<br />
<br />
1/4 cup mashed potatoes<br />
<br />
1/2 cup milk<br />
<br />

Mix together and divide into paper liners. Cook at 350 for 15-18 min.<br />

I always want too, and I am but there are always those areas that I never get too because the everyday stuff keeps me so dang busy. So as with many other things on my now almost year old resolutions list there is no more tomorrow I am doing it TODAY! So yesterday I got my house pretty clean and I really didn't even mean too I was just thankfully super productive! I played with kids and had a house people could come too without me wanting to crawl under one of the messes and die. Yeah. It felt pretty good.<br />
<br />
I had a friend tell me about <a href="http://flylady.com/">fly lady</a> about a year ago and I got as far as the sink and of course life happened. Now while I am not sure I'll do everything of hers I will keep up the sink thing. She says shine your sink and keep it that way. So like you rinse a dish then put it in the dishwasher because you have to dry your sink out so it will stay shiny. And from having a shiny sink you want everything looking shiny. I will say that is true...it seems to work for me so I am going to go finish shining my sink and organize my little guys new clothes and I will feel really good about today. Then if I get showered and the cupcakes made for my little guys party tomorrow anything else will just be a bonus and I will be a HUGE SUCCESS!<br />

And you can do fabric or googly eyes whatever you have! Easy peasy.<br />

I cut ruffles off of a pair of pants I wasn't going to put her in and started attaching with fabric glue! Just make sure you have something in-between the front and back of the onesie so you don't leak and glue them together! Then to secure for sure for sure just add a few stitches but your glue should work just fine! FUN HUH!? Free, and they have ended up being my favorite things for her!<br />

I did it I followed the recipe from <a href="http://www.howsweeteats.com/2011/06/whole-wheat-brown-sugar-banana-bread-pancakes/">how sweet it is</a> right on down to the maple glaze. Delish. However I could have done without because the pancakes were so yummy they would have been tasty with just some sugar...or PEANUT BUTTER!!! Yum. They were just a fun tasty new idea and easier (and faster) that baking banana bread but equally as delicious! I must say try them, try them, try them! Thank you to other people who come up with fantastic recipes so I can try them and feel like an amazingly fancy cook!<br />

</div><div>Flint loved looking at all the animals and he was always quick to take the opportunity for a closer look when they had animals out for people to pet. He even stole a quick hug from a goat...I did in a little bit of worry get him moving from there I was worried that his fearless approach would leave him without an ear or something :) But it was great for the low price of my entrance we were able to see a sea lion show, all the farm animals big and small a heart could desire, and if you really want a fun treat you could try any variety of deep fried food. I am BACK! I had my little girl and she is just perfect! She is so sweet Hinkley Ann Campbell came to us August 29 @ 2:50 pm and life as been just so crazy and wonderful and busy and did I say wonderful? Delivery was great (way better than my first) but she was only 7lbs 6oz so compared to her big brother who was over 9lbs...it was bound to be better. We are just so grateful and blessed that she is here and healthy. And our new little family is just perfect, and big brother is adjusting so well! (He might love her too much sometimes but that's OK!)<br />
<br />
One thing I am struggling with however is getting anything done...so I am ready to get back blogging and I feel like giving myself structure will help me get everything done. We'll see, now don't worry I am not striving for perfection because I know that us just not me...I will never have an immaculate house with bread baking in the oven and sewing my children's clothes but I do want to do more than sit on the couch wondering what to do or where to start...so I think if I give myself certain things to do it will help and I can do it all: snuggle on the couch, tidy up enough to not be embarrassed, and continue all of my projects and journaling while taking care of myself as well. That is what I am striving for anyway...we'll see how I do.<br />

I will come up with something fun to do with my kiddo's maybe a DIY sorta thing, a craft, or just a visit to the park. But while I don't care about being that mom that can do it all I do want to always do fun fulfilling things with my kids. I never want to miss out on one fun stage of their life. This will be my crafts and projects day...It will be a WOW because I actually finished a project to blog about or I will show off someone else's project that totally wow's me and I wish I came up with :) Also if I find a project and can do it I will try my own version and show that too. This one might be a little harder. Because sometimes I can't keep up with all the projects I find or think up but I'll do my best!<br />

This will be my day where I blog about ways that mommies can take care of themselves because lets face it sometimes all we do is take care of our kids and our house. I think I might be able to do all that better if I take care of myself a little too...So I will blog about fitness, fashion (because I am so fashionable ha ha), and beauty. </ul><h3 style="color: #666666; font-size: 1.6em; font-weight: normal; line-height: 1.3em; margin-bottom: 10px; margin-left: 0px; margin-right: 0px; margin-top: 0px;">Directions</h3><ol style="line-height: 18px;"><li style="line-height: 21px; list-style-image: initial; list-style-position: outside; list-style-type: decimal;"><strong>Crust:</strong> In a standing electric mixer fitted with the paddle, beat the butter with 3/4 cup of the pretzels and the confectioners’ sugar at low speed until creamy. Beat in the flour and egg. Add the remaining 1/2 cup of pretzels, being sure to leave some pretzel pieces intact. Flatten the dough between 2 sheets of plastic wrap (dough will be very sticky) and refrigerate until chilled, at least 30 minutes.</li>
<li style="line-height: 21px; list-style-image: initial; list-style-position: outside; list-style-type: decimal;">Preheat the oven to 350°. Roll out the dough between the sheets of plastic wrap to a 12-inch round. Peel off the top sheet and invert the dough over a 11-inch tart pan with a removable bottom. Press the dough into the corners and patch any tears by trimming the overhanging dough and pressing it into holes. Refrigerate the shell for 30 minutes or until firm.</li>
<li style="line-height: 21px; list-style-image: initial; list-style-position: outside; list-style-type: decimal;">Line the shell with parchment paper and fill with pie weights. Bake for about 30 minutes, until nearly set. Remove the parchment and weights and bake for 10 to 15 minutes longer, until the tart shell is firm; cover the edge with foil if it darkens too much. Let the shell cool completely. Brush the melted chocolate over the bottom and up the side and refrigerate for 10 minutes, until set.</li>
<li style="line-height: 21px; list-style-image: initial; list-style-position: outside; list-style-type: decimal;"><strong>Ganache:</strong> Meanwhile, bring cream to boil in heavy small saucepan and whisk until smooth. Spread 1 cup chocolate filling in prepared crust. Refrigerate until firm, about 45 minutes. Reserve remaining filling in saucepan.</li>
<li style="line-height: 21px; list-style-image: initial; list-style-position: outside; list-style-type: decimal;"><strong>Caramel:</strong> Stir sugar and 1/3 cup water in heavy medium saucepan over low heat until sugar dissolves. Increase heat and boil until syrup is amber color, brushing down sides with wet pastry brush and swirling pan occasionally, about 8 minutes. Remove from heat. Add cream, butter, vanilla and salt (mixture will bubble up). Return pan to very low heat; stir until caramel is smooth and color deepens, about 5 minutes. Refrigerate uncovered until cold but not firm, about 10-20 minutes.</li>
<li style="line-height: 21px; list-style-image: initial; list-style-position: outside; list-style-type: decimal;">Spoon caramel over ganache, leveling with a spatula. Sprinkle 1/4 cup crushed pretzels over caramel. Pipe of drizzle reserved chocolate filling decoratively over caramel and pretzels (if chocolate is too firm to pour, warm slightly over low heat). Refrigerate tart until caramel is firm, at least 1 hour. (Can be made 2 days ahead. Cover keep chilled.)</li>

I gained weight just looking at everything!!! So I will post some recipes soon and if I make it to this sunday it will be a doozy! I have to stop eating anything rich of any form because this one promises to be! Thanks for forgiving me!!!<br />

I took them to a work bbq, and my little brothers Eagle Court of Honor (where there were 7 boys receiving Eagles) so there were plenty of critics and everyone gave rave reviews...and they were yummy! I did change one small thing (I added more zest and juice) but it probably didn't make too much of a difference so give it a try and I'm sure you'll love them! (I also doubled the recipe and it barely made 3 dozen so for your family one batch is great to take anywhere and eat a few right off the pan I would for sure double!)<br />

Lemon Crinkle Cookies<br />

½ cups butter, softened<br />
1 cup granulated sugar<br />
½ teaspoons vanilla extract<br />
1 whole egg<br />
lemon zest from one lemon<br />
1 Tablespoon fresh lemon juice (can add a little more for stronger flavor)<br />
¼ teaspoons salt<br />
¼ teaspoons baking powder<br />
⅛ teaspoons baking soda<br />
1-½ cup all-purpose flour<br />

Preheat oven to 350 degrees. Grease light colored baking sheets with non-stick cooking spray and set aside.<br />

In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.<br />
<br />
Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.<br />

Peanut butter brownie Trifle is something that I made with my hubby in mind...He is a Reese's guy. I mean seriously it is an obsession...for Christmas I probably buy about 20 packs of Reese's tree's because there is hardly anything he would want more...and again for each holiday that is all I get him and he loves it.<br />
<br />
Well, I heard of more rich trifles, every other one I had done was more light and with fruit; which I love but I will say this was a winner! (and pretty easy)<br />
<br />
Peanut Butter Brownie Trifle<br />
<br />
1 brownie mix prepared and cut into bite size pieces (or feel free to buy brownie bites)<br />
1 box of instant vanilla pudding<br />
1 1/2 cup peanut butter (I like creamy but chunky would work too)<br />
1 bag of Reese's mini or reg cut into half or fourths<br />
1 container of cool whip or I like real whipped cream<br />
<br />
Have your brownies cooked and cut, as well as your Reese's cut first thing so when you make your pudding and your cream you can just start layering.<br />
<br />
Make vanilla pudding according to package directions but add your peanut butter to of course give it the PB flavor just whisk it in when it is all mixed. Be sure it is set up before you start layering<br />
<br />
Layer brownies and Reese's on bottom of dish, and dollop pudding and cream over top, then more brownies and Reese's with more cream.<br />
<br />
I finished it off with a layer of whipped cream and left over Reese's chunks for pretty on top.<br />
